Cool, good to see this coming together.

I've been working on video support for our new site during this week. 
Here's (briefly) how we would like to do things:

1) Media Mover: for harvesting, processing and storing video (and 
possibly other multimedia content): http://drupal.org/project/media_mover

We'll use two CCK filefields (http://drupal.org/project/filefield) in 
our video node type: one for the original video file that the user 
uploads, and another where Media Mover stores the processed file (note: 
storage processed files in a CCK field still has to be finished in Media 
Mover). We'll use FFMpeg for the transcoding (Media Mover's 'processing' 
step).

2) SWFobject to embed the Flash video in our site: 
http://drupal.org/project/swfobject_api, http://code.google.com/p/swfobject/

3) JW Media media player: 
http://www.jeroenwijering.com/?item=JW_FLV_Media_Player (there's a 
Drupal helper module for this player, but we're not sure whether we'll 
use it; same goes for SWFobject).

Did you consider using Media Mover? It seems like a great solution for 
dealing with multimedia (although it isn't production ready yet, as far 
as I know). You could have MM at the core of a multimedia site (dealing 
with all the heavy lifting), and then use whatever you like (Flowplayer, 
JW media player, jQuery media, ...) to display it.
